Domaine Rolet Arbois Savagnin Ouille 750ml
In the Jura, ouillé indicates that barrels are topped up with wine to prevent the oxidative character and flor yeast that is characteristic of old school classic Jura. Almost all modern Jura whites are made in this way, as are 99% of white wines worldwide. Savagnin is a very old variety which beget many other grapes over the centuries, including Chenin Blanc. This Savagnin is from parcels in Château Gimont and Gaillard, in Montigny-les-Arsures, planted in grey marls.
